Hello and Happy Friday again! How did a four-day work week become so long? Anyway, it’s my favorite day and time to share Friday Favorites. This week I’m sharing some of my kitchen favorites.

One/ For the last three to four weeks, I’ve been meal prepping according to the plans and recipes in Cook Once: Eat All Week by Cassy Joy Garcia. We have found some new favorite meals from this book and the prep doesn’t take that much time. I can usually get the prep done in two hours or less on Sunday evenings, while cooking another meal. It basically involves batch cooking a meat, a vegetable and a starch, and then creating three quick meals from those ingredients with a few other items. There are also suggestions for meals for two more nights with each plan. I usually cook 6-7 nights per week, so I do have to come up with more meals than these provide but I’m still enjoying this approach to meal prep and batch cooking.
Two/ Crock Pot Slow Cooker- Many of the meats for the meals in the book can be cooked in bulk in a slow cooker. Even before discovering this book, a crock pot/slow cooker was one of my favorite kitchen appliances. I’m even more smitten with it now that I have one with a timer that goes to warm on its own after the set time.
Three/ Vegetable/ potato peeler– If you don’t have one of these, you need one! I can’t imagine peeling potatoes without it.
Four/ Meal prepping means you need storage. I love my Pyrex glass dishes. I have had them for years and store/freeze leftovers in the smaller ones. I also just ordered some replacement lids and I might need a couple of larger ones if I’m going to keep up the bulk cooking.
Five/ Bamboo cooking utensil set– I’ve had a set similar to this one for years and they are nearly indestructible. These are so much better and hold up to heat better than those hard plastic spatulas.
Six/ Green Pan 12-inch non stick ceramic pan I’ve had this for two years now and it’s still going strong! I have yet to have anything stick that I can’t get out! This is almost the only pan I use.
Seven/ Cuisinart 5-in-1 Griddler A few years ago I was looking for a waffle maker with removable plates. My parents gave me this griddler which is so much more than a waffle maker. (Mine came with the waffle plates.) I love this thing. If I’m not baking something (sheet pan meals) or cooking in the crock pot, then it’s being grilled on this thing. It also makes the best pancakes (which are tricky with almond or gluten free flour, but so easy with this griddler.)
So tell me, do I need an instant pot and/or an air fryer? I hate frying the traditional method and we rarely eat fried foods. What are your kitchen favorites?
